- Chicken breast120 g
Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.

- Spring onion20 g
- GochujangHalf a tbsp (9 g)
- Tamari2 tsp (10 g)

Method
Flatten the chicken to an even thickness, rub it with the tamari and half the gochujang and grill it under a hot grill for five minutes a side until charred at the edges and no longer pink inside. Rest and slice.
Slice the cucumber thinly and toss it with the rice vinegar and a pinch of salt.
Rice in the bowl, chicken over, the kimchi and cucumber in two piles beside it, the rest of the gochujang dotted on and the spring onion and sesame seeds over.
Worth knowing
- The small bowl in the Korean set. The rice is 100 g cooked and the chicken 120 g raw, which is what keeps it around 346 kcal; the kimchi and cucumber are there for bulk and cost almost nothing.
- Gochujang carries a gluten flag because most brands are made with wheat. Kimchi carries fish and crustacean flags for the fish sauce and salted shrimp in the traditional recipe.
