  • Boiled potato200 g

    Left over from the night before is ideal. Cooked weight.

  • Chicken breast150 g

    Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.

  • Red pepper80 g
  • Egg1 large, about 55 g
  • Olive oil8 g
  • Smoked paprikaHalf a tsp

Method

  1. Fry the chicken, in 2 cm pieces, in half the oil over a high heat for five minutes until browned and cooked through. Set aside.

  2. Add the rest of the oil, the onion and pepper, sliced, and cook for four minutes. Add the potatoes, crushed roughly with a fork, press them into the pan and leave for four minutes until the base is crisp.

  3. Turn everything over, add the paprika and the chicken and cook for two minutes more.

  4. Fry the egg in a separate pan or push the hash aside and fry it in the gap. Serve with the yolk broken over and the parsley.

Worth knowing

  • Leave the potatoes alone once pressed into the pan. Crispness needs contact and time; stirred, they stay soft.
  • Leftover roast chicken works just as well as fresh; add it with the paprika rather than frying it first.
