Ingredients
- Light mozzarella60 g
- Grapes100 g
- Balsamic glaze1 tsp, about 7 g
- Fresh basilA few leaves, torn
- Black pepperA grind
- SaltA pinch
Method
Drain the mozzarella and pat it dry on kitchen paper, then tear it into rough pieces about the size of a grape. Torn edges hold dressing; cut ones do not.
Halve the grapes and toss them on a plate with the mozzarella, a pinch of salt and the torn basil.
Dot the balsamic glaze over in drops and finish with black pepper. Leave it five minutes at room temperature before eating.
Worth knowing
- Light mozzarella is 165 kcal per 100 g against 280 for the full-fat kind, and in a dish this cold and sharp the difference in texture is hard to spot.
- Grapes with cheese was normal before tomatoes were. It still works.
