Ingredients
- Halloumi70 g
- Courgette200 g
Sliced lengthways into thin strips with a peeler or a knife.
- Cooked couscous150 g
Cooked weight.
- Cherry tomatoes100 g
- Olive oil5 g
- Lemon juiceHalf a lemon
- Fresh mintA handful, chopped
- Chilli flakesA pinch
Method
Get a griddle pan smoking hot. Brush the courgette strips with the oil and cook in batches for a minute a side until striped, then the halloumi slices for two minutes a side until golden.
Halve the tomatoes and mix them into the couscous with the lemon, mint, chilli flakes and a pinch of salt.
Pile the courgette and halloumi on top and eat while the cheese is still soft.
Worth knowing
- Halloumi hardens as it cools. Everything else should be ready before it goes in the pan.
- Seventy grams of halloumi is smaller than the half-block most people cut. At 125 g the dish is nearer 670 kcal.
