  • Kimchi60 g, chopped
  • Tamari1 tbsp (15 g)
  • Egg1 large, about 55 g
  • Toasted sesame oil1 tsp (4 g)
  • Spring onion15 g, sliced

Method

  1. Simmer the oats in the water for four minutes, stirring.

  2. Stir in two-thirds of the kimchi and the tamari and cook for one minute more.

  3. Fry the egg in the sesame oil over a high heat until the white is crisp at the edges and the yolk still soft, about two minutes.

  4. Egg on the oats, the rest of the kimchi and the spring onion over.

Worth knowing

  • Kimchi from a jar usually contains fish sauce or salted shrimp, so this carries fish and crustacean flags. Vegan kimchi drops both.
  • The egg is fried in the sesame oil rather than the oil going on at the end, so the whole teaspoon ends up in the bowl. That is 36 kcal and most of the flavour.
