  • Garlic2 cloves, about 6 g
  • Fresh red chilliOne, sliced
  • Fresh gingerA thumb, grated
  • Soy sauce1 tbsp, about 15 g
  • Rice vinegarA splash
  • Sugar1 tsp, about 4 g
  • Rapeseed oil6 g

Method

  1. Heat the oil in a wok until smoking. Add the green beans, whole, and leave them for two minutes before tossing, so they blister. Cook for four minutes in all until wrinkled and tender. Lift out.

  2. Add the mince to the pan and fry hard for five minutes, breaking it up, until browned and starting to crisp at the edges.

  3. Add the garlic, chilli and ginger for thirty seconds, then the soy sauce, vinegar and sugar. Return the beans and toss for a minute.

  4. Serve over the rice.

Worth knowing

  • The beans must go in first and alone. Blistering needs dry beans, a hot pan and patience; stirred constantly they steam.
  • Five percent pork mince is 125 kcal per 100 g. Standard pork mince is nearer 220, which would add 140 kcal to this plate.
