Method

  1. Brown the mince in a hot dry pan, breaking it up with a spoon, for six to eight minutes until the edges crisp and any liquid has gone.

  2. Add the cumin, cinnamon, salt and pine nuts for the last minute, stirring so the nuts toast without burning.

  3. Chop the cucumber, tomato, onion and lettuce small and dress them with the oil, lemon and a pinch of salt.

  4. Spread the hummus across the plate, pile the salad on one side, spoon the hot beef over and scatter the parsley.

Worth knowing

  • Cinnamon in beef reads as Lebanese rather than as pudding. A pinch, enough to notice and not enough to name.
  • The mince is 5% fat. Ten per cent at the same weight adds about 70 kcal and leaves the pan greasy.
