    Weighed cooked and peeled, which is what makes 89 g of protein work. Raw and in the shell, the same 350 g lands nearer 70 g. The stated 1 g of fat is on the low side: prawns themselves carry around 4 g at this weight.

Method

  1. Boil the potatoes until tender, drain well and mash plain, seasoning with salt.

  2. Steam or blanch the green beans until just tender with a bite.

  3. Sweat the diced onions in a hot pan until soft, add the garlic, paprika and chilli flakes, then the shrimp, searing two to three minutes until pink and opaque.

  4. Stir through the tomato sauce and let it coat the shrimp for a minute.

  5. Plate the mash, add the beans alongside and spoon over the shrimp with the sauce.

Worth knowing

  • The mash is plain: no butter, no milk. That is the whole reason a plate with mash on it comes in under 530 kcal.
  • Two to three minutes is the entire cooking window for prawns. Past that they tighten and the dish is a different, worse one.
