  • Pork mince, 5% fat160 g

    Weighed raw.

  • Garlic2 cloves, about 6 g
  • Spring onion20 g
  • Fish sauce3 tsp, about 15 g

    Two teaspoons go in the meat and one in the dressing.

  • Sugar1 tsp, about 4 g
  • Lime juiceJuice of one lime
  • Fresh red chilliOne, sliced
  • Cooked rice noodles180 g

    Thin vermicelli, cooked, rinsed cold and drained well. Cooked weight, after soaking.

Method

  1. Mix the pork with the crushed garlic, chopped spring onion, two teaspoons of the fish sauce and a pinch of black pepper. Roll into ten small balls and flatten each slightly.

  2. Grill them under a high heat on a lined tray for twelve minutes, turning once, until browned and cooked through.

  3. Stir the remaining fish sauce, the sugar, lime juice and chilli together with three tablespoons of water for the dressing.

  4. Put the cold noodles in a bowl, top with the julienned carrot and cucumber, the herbs and the meatballs. Pour the dressing over and scatter the crushed peanuts on top.

Worth knowing

  • The noodles are served cold and the meatballs hot. Rinsing the noodles under the cold tap stops them clumping into one lump.
  • One teaspoon of sugar in the dressing is what balances the fish sauce and lime. It is 16 kcal and this does not work without it.
