Beef Pho-Style Broth with Rice Noodles
A quick version of the Hanoi soup: stock simmered with ginger, cinnamon and fish sauce, poured hot over rice noodles, pak choi and paper-thin raw sirloin. 33 g of protein for 339 kcal.

Ingredients
- Sirloin steak, fat trimmed, sliced paper thin120 g
Twenty minutes in the freezer first makes it possible to slice this thin. Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.

Made up from a cube or a pot.

- Ground cinnamonA pinch, or a stick

Method
Simmer the stock with the ginger, cinnamon and fish sauce for fifteen minutes. Add the pak choi for the last two.
Put the cooked noodles in a deep bowl and lay the raw beef slices over them in one layer.
Bring the broth back to a rolling boil and pour it straight over the beef. It cooks in the bowl in about thirty seconds.
Top with spring onion, chilli, the herbs and a squeeze of lime.
Worth knowing
- At 339 kcal with 33 g of protein, the broth is doing the work the fat usually does. Add 50 g more noodles for 55 kcal if it needs to be more filling.
- The beef must be sliced thin enough to see through, or the broth will not cook it. If it looks too thick, dip the slices in the boiling stock for ten seconds instead.
