- Cod fillet230 g
Weighed raw.
- Sweet potato200 g
- Kale80 g
- Onion40 g
- LemonA squeeze
- Olive oil spray4 sprays
Method
Roast the sweet potato in rounds at high heat for twenty-five minutes until the edges caramelise.
Set the seasoned cod on top and bake for ten to twelve minutes more, until it flakes at the thickest point.
Wilt the kale in a sprayed pan with the sliced onion and serve alongside with lemon.
