Ingredients

  • Turkey breast mince, 2% fat350 g

    Weighed raw. Thigh mince at 7% fat adds about 20 kcal per 100 g.

  • Rolled oats30 g

    Soaked in a splash of water for five minutes so they bind rather than sit dry in the loaf. Dry weight.

  • Egg1 large, about 55 g
  • Onion80 g

    Finely chopped and softened first. Raw onion in a meatloaf stays crunchy.

  • Garlic2 cloves, about 6 g
  • Tomato ketchup2 tbsp (30 g)
  • Worcestershire sauce2 tsp, about 10 g
  • Dried mixed herbsA teaspoon
  • New potatoes300 g

    Raw weight, skins on.

  • Green beans200 g
  • Olive oil spray4 sprays, about 1 g

    Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.

Method

  1. Heat the oven to 180°C. Soften the onion in a sprayed pan for five minutes and let it cool a little.

  2. Mix the mince with the onion, garlic, soaked oats, egg, Worcestershire sauce, herbs, half the ketchup and a good pinch of salt. Shape it into a loaf on a lined tray, about 8 cm wide.

  3. Brush the rest of the ketchup over the top and bake for forty-five minutes, until the top is dark and the centre reaches 74°C, or a skewer comes out hot and the juices are clear.

  4. Rest the loaf for five minutes while you boil the potatoes for fifteen minutes and the beans for four. Slice thickly and serve.

Worth knowing

  • The quantities above make 2 servings, which is half the loaf each. The figures shown here are per serving.
  • Shaped on a tray rather than pressed into a tin, the loaf browns on all sides and the outside slices are the best ones. In a tin it steams.
  • Ordinary oats carry the gluten flag under UK labelling. Certified gluten-free oats swap in with no other change.
