Ingredients
- Pork mince, 5% fat170 g
Weighed raw.
- Apple60 g
Grated and squeezed dry. The juice would make the patties fall apart.
- Onion30 g
Grated, squeezed dry with the apple.
- Dijon mustard1 tsp, about 6 g
- Dried mixed herbsA teaspoon
- English muffin1 muffin, about 65 g
- Little gem lettuce30 g
- Tomato60 g
- Gherkins30 g
- Light mayonnaise1 tbsp, about 15 g
- Olive oil spray4 sprays, about 1 g
Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.
- SaltTo taste
Method
Mix the pork with the apple, onion, mustard, herbs and salt. Shape into two patties the width of the muffin and chill for ten minutes.
Fry them in a sprayed pan over a medium-high heat for five minutes a side, until well browned and no longer pink in the middle. Pork patties need cooking through, so cut one to check.
Split and toast the muffin. Spread the mayonnaise on the base and stack the lettuce, tomato, patties and sliced gherkins.
Worth knowing
- Two thin patties rather than one thick one. Pork mince has to be cooked through, and a thick patty is dry outside by the time the middle is done.
- An English muffin is a smaller bun than a brioche one and about half the calories. The muffin is still the second biggest number on the plate after the pork.
