Ingredients
- Turkey breast mince, 2% fat170 g
Weighed raw. Thigh mince at 7% fat adds about 20 kcal per 100 g.
- Onion30 g
Finely chopped. Big pieces stop the patties holding together.
- Egg white1 white, about 33 g
- Smoked paprikaA teaspoon
- Sweet potato160 g
Raw, peeled weight.
- Olive oil1 tsp (5 g)
- Wholemeal pitta1 pitta, about 60 g
- Little gem lettuce30 g
- Tomato60 g
- Greek yogurt, 0% fat30 g
- SaltTo taste
Method
Heat the oven to 220°C. Cut the sweet potato into wedges, toss them with the oil and salt on a tray and roast for thirty minutes, turning once.
Mix the mince with the onion, egg white, paprika and salt. Shape it into two flat patties about the size of your palm and press a dimple into the middle of each.
Fry the patties in a hot, dry non-stick pan for four to five minutes a side, until the outside is browned and the centre is no longer pink.
Warm the pitta, split it and fill it with the lettuce, sliced tomato, the two burgers and the yogurt. Serve the wedges on the side.
Worth knowing
- Two thin patties cook through faster than one thick one and give more browned surface, which is where turkey mince gets its flavour.
- The pitta is the biggest single item on the plate after the meat. Eaten without it, the meal drops by around 150 kcal and most of its carbohydrate.
