  • Chicken breast160 g

    Cut into 3 cm chunks so they all cook in the same time. Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.

Method

  1. Toss the chicken with the oil, lemon, crushed garlic, oregano and salt and leave it for at least thirty minutes.

  2. Thread onto two skewers and grill under a hot grill or on a griddle pan for ten to twelve minutes, turning twice, until charred at the corners and no longer pink inside.

  3. Warm the pitta for a minute in the toaster, split it, and spread the tzatziki inside.

  4. Fill with the shredded lettuce, sliced tomato and onion, then pull the chicken off the skewers into the pitta.

Worth knowing

  • Shop souvlaki wraps run to 800 kcal or more because the pitta is bigger and the tzatziki is spooned on without counting. Fifty grams of tzatziki is a generous smear and 50 kcal.
  • Chunks, not strips. Strips dry out on a skewer before they colour.
