Ingredients
- Seitan, in chunks150 g
Seitan is wheat gluten. It is the one protein here that is nothing but the allergen.
- New potatoes, halved150 g
Raw weight, skins on.
- Red pepper100 g
- Red onion80 g
- Cherry tomatoes100 g
- Olive oil2 tsp (8 g)
- Garlic3 cloves, about 9 g
- Smoked paprika1 tsp
- Fresh rosemaryA sprig, leaves chopped
- Lemon juiceHalf a lemon
- SaltTo taste
Method
Heat the oven to 210°C. Toss the potatoes with half the oil and salt and roast on a tray for fifteen minutes.
Toss the seitan, pepper, onion and whole garlic cloves with the rest of the oil, the paprika and rosemary. Add them to the tray in one layer and roast for another twenty minutes.
Add the tomatoes for the last eight minutes so they burst but do not collapse.
Squeeze the roasted garlic out of its skins over everything, then the lemon.
Worth knowing
- Seitan browns and goes chewy at the edges in the oven, like the outside of a roast. It dries out if it goes in too early, so the potatoes get a head start.
- One layer on the tray. Piled up, the vegetables steam and nothing colours.
