Ingredients
- Seitan, sliced thin120 g
Seitan is wheat gluten. It is the one protein here that is nothing but the allergen.
- Wholemeal pitta1 pitta, about 60 g
- Tzatziki40 g
- Tomato100 g
- Red onion40 g
- Little gem lettuce40 g
- Olive oil5 g
- Garlic1 clove, about 3 g
- Dried oregano1 tsp
- Smoked paprikaHalf a teaspoon
- Lemon juiceA squeeze
Method
Toss the seitan with the oil, crushed garlic, oregano, paprika and a pinch of salt.
Fry it in a hot pan for five minutes, turning, until the thin edges go crisp and dark.
Warm the pitta in the pan or a toaster and split it open.
Fill with the shredded lettuce, sliced tomato and onion, the seitan, the tzatziki and a squeeze of lemon.
Worth knowing
- Seitan takes a dry rub better than most things because it has no water to give up. It fries like the outside of a kebab, which is the idea.
- Tzatziki at 40 g is 40 kcal. The pitta is 150 and the biggest single line, so a second one is not a small decision.
