- Pork loin steak, fat trimmed160 g
One steak, fat trimmed. Snip the edge in two or three places so it does not curl in the pan. Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.
- Red cabbage150 g
Sliced finely.
- Apple80 g
Grated, skin and all.
- Onion50 g

Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.

Method
Soften the onion in a sprayed saucepan for five minutes. Add the cabbage, apple, vinegar, honey, bay leaf, salt and a splash of water, cover and cook on a low heat for thirty minutes, stirring twice, until the cabbage is soft and glossy.
Ten minutes before the cabbage is done, season the pork and fry it in a sprayed hot pan for four minutes a side, until browned and just cooked through with a hint of pink at the centre.
Rest the pork for three minutes and serve it on the cabbage with the resting juices poured over.
Worth knowing
- The cabbage can be made in a big batch and keeps in the fridge for a week. It is better on the second day.
- There is no potato here, so the plate sits in the lighter band. A boiled potato of 150 g adds about 110 kcal and makes it a bigger dinner.
