Method

  1. Slice the cold beef as thinly as you can against the grain.

  2. Spread the mustard on both slices, layer the beef, tomato and rocket, and press it together firmly.

Worth knowing

  • Against the grain matters more with cold beef than hot. Sliced with it, leftover steak eats like rope.
