- Black beans, tinned and drainedTwo tins, drained (400 g)
Dried on kitchen paper. Wet beans make a patty that will not hold. Drained weight.

Dry weight.
- Egg1 large, about 55 g
- Red onion80 g
- Garlic2 cloves, about 6 g
- Chipotle paste2 tsp (12 g)
- Ground cumin1 tsp
- Smoked paprika1 tsp
- Rapeseed oil8 g
- Wholemeal pitta2 pittas, about 120 g
- Tomato salsa80 g
- Greek yogurt, 0% fat60 g
Method
Mash three quarters of the beans roughly with a fork, then mix in the rest whole with the oats, egg, finely chopped onion, garlic, chipotle, spices and salt.
Shape into four patties and chill for 20 minutes so they firm up.
Fry in the oil over a medium heat for four minutes a side until dark and crusted. Do not move them before the crust forms.
Warm the pittas, split them, and fill each with two patties, salsa and yogurt.
Worth knowing
- The patties are soft compared with a meat burger. That is how bean burgers are, and the chilling is what keeps them in one piece.
- Pitta is 83 g of the carbohydrate. The patties on a plate with the salsa and yogurt are about 410 kcal a serving.
