Ingredients
- Firm tofu, cut into thick slabs200 g
Weighed after pressing. Silken tofu is about half the calories and protein.
- Mushrooms, halved150 g
- Pak choi150 g
- Soy sauce4 tsp (20 g)
- Fresh gingerA thumb, sliced
- Garlic2 cloves, about 6 g
- Chinese five spiceHalf a teaspoon
- Sugar1 tsp (4 g)
- Vegetable stock200 ml
Made up from a cube or a pot.
- Cornflour1 tsp (5 g), slaked in cold water
- Toasted sesame oil1 tsp (4 g)
- Rapeseed oil5 g
Method
Dry the tofu slabs and sear them in the rapeseed oil over a high heat for three minutes a side until browned. Lift them out.
Fry the mushrooms in the same pan for four minutes, then add the ginger, garlic and five spice for thirty seconds.
Add the stock, soy and sugar, return the tofu, and simmer with the lid half on for twelve minutes so the tofu drinks the sauce.
Steam the pak choi for three minutes. Stir the cornflour into the pan and let it thicken for a minute, add the sesame oil, and serve the tofu and mushrooms over the pak choi.
Worth knowing
- Braising is what makes tofu taste of something. Seared and then left to simmer in the sauce, it ends up seasoned through rather than coated.
- At 437 kcal there is room for rice. A 150 g portion of cooked rice makes it about 630.
