    Weighed raw.

  • Feta20 g

    Crumbled into the mince. Twenty grams salts and moistens the whole patty; more makes it fall apart.

  • Red onion30 g
  • Dried oreganoA teaspoon
  • Garlic1 clove, about 3 g
  • Lemon zestA little
  • Olive oil spray4 sprays, about 1 g

    Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.

Method

  1. Mix the mince with the feta, finely chopped onion, oregano, garlic, zest and pepper, and shape into two patties about 2 cm thick. Chill for ten minutes.

  2. Spray a griddle or frying pan, heat it well, and cook the patties for five minutes a side until marked and firm with no pink at the centre.

  3. Chop the tomato and cucumber with the mint and a pinch of salt.

  4. Serve the patties on the salad with the tzatziki spooned over.

Worth knowing

  • No egg needed. The feta and the moisture in the onion hold the patties together as long as they are chilled before they meet the pan.
  • A pitta alongside adds 150 kcal and a gluten flag. As written the plate has neither.
