Ingredients

  • Whey protein isolate1 scoop, about 30 g

    Chocolate or vanilla. Whisked in off the heat, or it goes stringy. Values for an unflavoured or lightly flavoured isolate. A concentrate or a blend carries more fat and carbohydrate at the same scoop.

  • Cocoa powder3 tsp, about 9 g
  • Skimmed milk250 ml
  • Granulated sweetenerTo taste

Method

  1. Mix the cocoa and salt with two tablespoons of the cold milk in the mug to make a smooth paste.

  2. Heat the rest of the milk in a small pan until steaming but not boiling, then take it off the heat and leave it thirty seconds.

  3. Pour a little hot milk onto the paste and stir, add the whey and whisk hard with a small whisk or a fork until smooth, then top up with the remaining milk and add sweetener to taste.

Worth knowing

  • Whey curdles above about 70°C. Milk that has been off the boil for half a minute is cool enough, and whisking rather than stirring keeps it smooth.
  • Skimmed milk and cocoa on their own are a modest snack. The whey turns the mug into something with the protein of a small meal.
