Ingredients

  • Rolled oats100 g

    Dry weight.

  • Whey protein isolate2 scoops, about 60 g

    Values for an unflavoured or lightly flavoured isolate. A concentrate or a blend carries more fat and carbohydrate at the same scoop.

  • Peanut butter70 g (a generous 4 tbsp)

    The kind that is peanuts and salt. Sweetened spreads carry more carbohydrate.

  • Honey3 tsp, about 21 g
  • Skimmed milk60 ml
  • Dark chocolate, 85%4 squares, about 20 g
  • SaltA pinch

Method

  1. Line a 450 g loaf tin with baking paper, leaving some hanging over the sides to lift the slab out later.

  2. Warm the peanut butter and honey together in a pan over a low heat until loose, then take it off the heat and stir in the milk.

  3. Mix the oats, whey and salt in a bowl, pour in the peanut butter mixture and stir until everything is coated and there is no dry powder left.

  4. Press the mix into the tin firmly with the back of a spoon. Melt the chocolate in short bursts in the microwave and spread it over the top.

  5. Chill for two hours until solid, lift out and cut into six bars.

Worth knowing

  • Press harder than feels reasonable. A loosely packed bar falls apart when it is cut, and the mix does not get another chance to bind.
  • The peanut butter and chocolate are the fat; the whey is nearly all of the protein. Two scoops in a six-bar tray is the level where the bars still taste of peanut rather than powder.
