Ingredients
- Rolled oats120 g
Dry weight.
- Banana2 medium, about 200 g
Peeled weight. A medium banana is about 100 g without the skin.
- Egg2 large, about 110 g
- Skimmed milk100 ml
- Whey protein isolate1 scoop, about 30 g
Values for an unflavoured or lightly flavoured isolate. A concentrate or a blend carries more fat and carbohydrate at the same scoop.
- Baking powder1 tsp
- Ground cinnamon1 tsp
- SaltA pinch
Method
Heat the oven to 180°C and line a 20 cm square tin or a small roasting tray with baking paper.
Mash the bananas well, then beat in the eggs and milk.
Stir in the oats, whey, baking powder, cinnamon and salt. Pour into the tin and bake for twenty-five minutes until the top is golden and a knife comes out clean.
Cool for ten minutes before cutting into six squares.
Worth knowing
- Ripe bananas are the sweetness; there is no sugar in this. Spotty ones are noticeably sweeter than yellow ones.
- The whey roughly doubles the protein of a plain baked oat. Leaving it out makes a slightly softer square with the same carbohydrate.
