Ingredients

  • Rolled oats100 g

    Dry weight.

  • Almond butter4 tbsp (60 g)
  • Egg1 large, about 55 g
  • Banana1 medium, about 100 g

    Peeled weight. A medium banana is about 100 g without the skin.

  • Whey protein isolate1 scoop, about 30 g

    Values for an unflavoured or lightly flavoured isolate. A concentrate or a blend carries more fat and carbohydrate at the same scoop.

  • Ground cinnamon1 tsp
  • Baking powderHalf a teaspoon

Method

  1. Heat the oven to 180°C and line a 450 g loaf tin with baking paper.

  2. Mash the banana, then beat in the egg and almond butter until smooth.

  3. Stir in the oats, whey, cinnamon, baking powder and salt. Press into the tin and bake for eighteen minutes until golden at the edges and firm in the middle.

  4. Cool completely in the tin before cutting into six.

Worth knowing

  • Almond butter is the fat and about a third of the calories. Peanut butter swaps in at almost the same figures.
  • These are softer than a shop bar and keep for four days in the fridge. They also freeze, wrapped individually.
