Ingredients
- Rolled oats120 g

- Blueberries100 g
Frozen work as well as fresh and bleed less if you add them still frozen.
- Egg2 large, about 110 g
- Greek yogurt, 0% fat150 g
- Maple syrup2 tsp, about 14 g
- Baking powder1 tsp
- Vanilla extract1 tsp
- SaltA pinch
Method
Heat the oven to 180°C and line a 20 cm square tin with baking paper.
Whisk the eggs, yogurt, maple syrup and vanilla together until smooth.
Stir in the oats, baking powder and salt, then fold through most of the blueberries. Pour into the tin, scatter the rest on top and bake for twenty-five minutes until set and golden at the edges.
Cool before cutting into six. It firms up as it cools and cuts cleanly once cold.
Worth knowing
- The yogurt takes the place of milk and adds most of the protein. Full-fat Greek yogurt makes a richer square and moves the fat figure up.
- Two teaspoons of maple syrup across six squares is a light sweetness. It relies on the blueberries for the rest.
