Ingredients
- Gluten-free oats120 g
Dry weight. Certified, which is the only thing that separates them from ordinary oats in the numbers.
- Apple1 medium, about 160 g
Grated with the skin on, core discarded. Do not squeeze it; the juice is the liquid here.
- Egg2 large, about 110 g
- Raisins30 g
- Water80 ml
- Ground cinnamon1 tsp
- Baking powder1 tsp
- SaltA pinch
Method
Heat the oven to 180°C and line a 20 cm square tin with baking paper.
Whisk the eggs with the water, then stir in the grated apple, raisins and cinnamon.
Add the oats, baking powder and salt and stir well. Tip into the tin, level the top and bake for twenty-five minutes until firm and lightly browned.
Cool for fifteen minutes before cutting into six.
Worth knowing
- No sugar and no syrup. The apple and raisins carry the sweetness, and it is a plainer square for it, the kind that wants a cup of tea.
- Water instead of milk keeps dairy out and costs a little protein. Soya milk in its place would put some of that back.
