Ingredients
- Gluten-free oats30 g
Dry weight. Certified, which is the only thing that separates them from ordinary oats in the numbers.
- Banana60 g (about half)
Peeled weight. A medium banana is about 100 g without the skin.
- Egg1 large, about 55 g
- Ground cinnamonHalf a teaspoon
- Baking powderHalf a teaspoon
- SaltA pinch
Method
Mash the banana in a large mug with a fork until there are no lumps bigger than a pea.
Beat in the egg, then stir in the oats, cinnamon, baking powder and salt.
Microwave on full power for ninety seconds to two minutes until risen and springy on top. Leave it a minute before eating; it is very hot in the middle.
Worth knowing
- The banana is the only sweetness. A very ripe one makes a cake; a firm yellow one makes something closer to a savoury oat pudding.
- The egg is most of the protein and all of the structure. With just the white it is lighter and a little lower in fat but falls apart more easily.
