- Water300 ml
- Greek yogurt, 0% fat80 g
- GarlicHalf a clove, grated into the yogurt
- Egg1 large, about 55 g
- Feta30 g
- Butter5 g
- Chilli flakesHalf a teaspoon
- Fresh mintA few leaves, torn
Method
Stir the garlic into the yogurt and leave it while you cook.
Simmer the oats in the water with a pinch of salt for five minutes until thick.
Poach the egg for three minutes in barely simmering water.
Melt the butter in a small pan with the chilli flakes until it foams, about thirty seconds.
Oats in the bowl, yogurt over, then the egg, the feta crumbled, the chilli butter poured on and the mint.
Worth knowing
- Borrowed from çilbir, the Turkish dish where poached eggs sit in garlic yogurt under chilli butter. The oats make it a breakfast rather than a starter.
- Five grams of butter is 37 kcal and looks like nothing in the pan. Warmed with the chilli flakes and poured over, it is the whole top of the bowl.
