Ingredients
- Medjool dates2 dates, about 40 g
Stoned weight.
- Pistachios, shelled12 g (about 20)
Shelled weight. In the shell, about half is shell.
- SaltA few flakes
Method
Slit each date along one side with a small knife and ease out the stone without cutting all the way through.
Crush the pistachios roughly with the flat of the knife, or chop them, and press half into each date so it is overfilled.
Pinch the dates half closed, add a flake or two of salt to the exposed pistachios and eat.
Worth knowing
- A Medjool date is nearly all sugar and about a fifth of its weight is water. Two of them plus the pistachios is a small, dense snack, so the figure is where it is for so little on the plate.
- Pistachios are one of the lower-fat nuts and carry a fair amount of protein for their weight. Almonds in their place move the fat up slightly.
