Ingredients
- Trout fillet150 g
Weighed raw, skin on unless the method says otherwise. Cooked weight is roughly 20% less for the same fillet.
- Almonds12 g
Flaked, for the classic look. Twelve grams is about 70 kcal and enough to cover the fillet.
- Green beans150 g
- Butter6 g
- Lemon juiceOf half a lemon
- Fresh parsleyA handful, chopped
Method
Boil the beans for four minutes until just tender, drain and keep warm.
Fry the trout skin-side down in half the butter over a medium heat for four minutes, turn, and cook for two more. Lift it onto the plate.
Add the rest of the butter and the almonds to the pan and shake for a minute until the almonds are golden. Take it off the heat, add the lemon and parsley, and pour it over the fish.
Serve with the beans.
Worth knowing
- Trout amandine usually starts with a good deal of butter. Six grams is enough to fry the fish and toast the nuts if the pan is non-stick.
- Nothing starchy here, so it comes in at 335 kcal. Boiled potatoes are the classic addition and 150 g adds about 110 kcal.
