Turkey and Cashew Stir-Fry with Rice

Ingredients
- Turkey breast160 g
Cut into strips the size of your little finger. Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.
- Cornflour1 tsp (4 g)
- Cashews12 g
- Red pepper100 g
- Mangetout80 g
- Spring onion40 g
- Garlic2 cloves, about 6 g
- Fresh gingerA thumb, cut into matchsticks
- Tamari1 tbsp (15 g)
- Rice vinegarA splash
- Toasted sesame oil1 tsp, about 4 g
- Cooked white rice120 g
Cooked weight. About 50 g of dry rice becomes 130 g cooked.
Method
Toss the turkey strips in the cornflour with a spoon of water until they are coated in a thin paste.
Toast the cashews in a dry wok over a medium heat until golden, and tip them out.
Get the wok as hot as it goes, add the sesame oil and the turkey in one layer, and leave it for a minute before stirring. Cook until the strips are white through, about three minutes, then push them to the side.
Add the pepper, mangetout, garlic and ginger and stir-fry for two minutes. Pour in the tamari and vinegar, toss everything together with the cashews and spring onion and serve on the rice.
Worth knowing
- The cornflour coating is what stops turkey breast going stringy in a wok. It takes ten seconds and makes more difference than anything else in the recipe.
- Cashews are 48% fat, so twelve grams is a scatter rather than a handful. Doubling them adds about 70 kcal, which is fine if you know it.
