Ingredients

  • Edamame beans, shelled120 g

    Frozen and shelled. They go in from frozen. Shelled weight. In the pod, about half of what you weigh is pod.

  • Egg1 large, about 55 g
  • Cooked white rice130 g

    Cold from the fridge, cooked the day before. Cooked weight. About 50 g of dry rice becomes 130 g cooked.

  • Carrot, diced small60 g
  • Spring onion40 g
  • Fresh gingerA thumb, grated
  • Garlic2 cloves, about 6 g
  • Tamari1 tbsp (15 g)
  • Toasted sesame oil1 tsp (4 g)

Method

  1. Heat the rapeseed oil in a wok until it smokes. Scramble the egg for thirty seconds and lift it out.

  2. Add the carrot, ginger and garlic for a minute, then the edamame for two minutes, until they are hot through.

  3. Add the rice, breaking it up, and let it sit for a minute between stirs so it catches. Add the tamari and toss for two minutes.

  4. Return the egg, take it off the heat and finish with the sesame oil and spring onion.

Worth knowing

  • Edamame is 11 g of protein per 100 g, which is what makes this a dinner rather than a side. Peas are half that at the same weight.
  • One egg rather than two keeps it at 521. A second is another 79 kcal and 7 g of protein, and it is a fair trade if the day was long.
