- Egg whites6
- Smoked turkey breast60 g
- Peppers80 g
- Spring onion20 g
- Olive oil spray3 sprays
Method
Cook the diced peppers in a sprayed pan until they soften and take a little colour.
Add the shredded turkey to warm through, then pour in the whites and scramble gently over low heat.
Fold the spring onion in at the very end so it keeps its bite.
Worth knowing
- Egg whites go rubbery faster than whole eggs. Low heat and off early is the whole technique.
