Ingredients
- Egg whites4
- Flour tortilla1 medium
- Avocado purée30 g
- Olive oil spray2 sprays
Method
Heat a non-stick pan over medium heat with the olive oil spray, pour in the egg whites and cook gently, folding them over as they set so they stay soft.
Warm the tortilla briefly in a dry pan, spread the avocado purée across the base, lay the egg whites on top and roll it tight.
Worth knowing
- Designed to be eaten alongside the berry protein smoothie. Together they come to 402 kcal with 34 g of protein.
- Almost all the fat here is the avocado. The whites bring the protein and virtually none of it.
- Low heat and folding rather than scrambling is what keeps egg whites from going rubbery.
