Method

  1. Beat the whole eggs and whites together with salt and pepper. Warm the tortilla in a dry pan for 30 seconds a side and set aside.

  2. Scramble the eggs slowly over low heat so they stay soft and creamy, pulling them off just before they look done.

  3. Lay the smoked turkey down the centre of the warm tortilla, spoon the eggs over, then fan the sliced avocado on top.

  4. Fold in the sides and roll tight, then return the wrap seam-side down to the hot pan for a minute to seal.
