Method

  1. Boil the eggs, then peel and mash together with the homemade mayonnaise until you get a mimosa-style egg mix.

  2. Finely dice the onion and cornichon and fold through. Lay the tortilla flat, spread the egg mimosa mix across it, layer the smoked turkey breast on top, then roll tightly into a wrap.
