Method

  1. Whisk the egg, whites and isolate with cinnamon until smooth.

  2. Soak each slice for about twenty seconds a side, long enough to take the custard, short enough to still lift.

  3. Cook in a sprayed pan over medium-low until set and golden, then top with the berries.

Worth knowing

  • Isolate in the custard thickens it, so the soak is shorter than you would give ordinary French toast.
