Method

  1. Beat the whole eggs and whites together and season.

  2. Scramble them slowly over low heat, pulling the pan off before they look done.

  3. Fold the salmon through off the heat so it warms without cooking, and serve on toasted rye.

Worth knowing

  • Adding two whites to two whole eggs is what lifts the protein without adding fat.
  • Off the heat before it looks ready. Eggs carry on cooking in the pan for another thirty seconds.
