Method

  1. Soften the sliced onion and peppers in a sprayed pan with cumin and paprika until they collapse, about eight minutes.

  2. Add the passata and simmer until it thickens enough to hold a channel when you drag a spoon through it.

  3. Make two wells, crack in the eggs, cover and cook for four to five minutes until the whites set and the yolks do not.

  4. Crumble the feta over and eat it out of the pan.

Worth knowing

  • The sauce has to thicken before the eggs go in, or they sink and poach into soup.
