- Buckwheat flour40 g

- Skimmed milk80 ml
- Baking powderA quarter teaspoon

Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.

Method
Whisk the flour, baking powder, egg and milk with a pinch of salt and let it stand for ten minutes.
Drop tablespoons of batter into a sprayed pan over medium heat and cook for a minute and a half a side until they puff and brown.
Top each blini with a spoon of quark, a fold of salmon, dill, lemon and black pepper.
Worth knowing
- Quark in place of crème fraîche, which is the usual partner and about 30% fat. The whole plate is 13 g of fat, split between the salmon and the egg in the batter.
- The blinis can be made the night before and warmed in a dry pan. The batter does not keep; the blinis do.
