Method
Blend the cottage cheese, eggs and oats to a loose batter, then stir in the chopped spring onion and a lot of black pepper.
Cook three or four small pancakes in a sprayed pan over medium heat, two to three minutes a side. They are soft in the middle and need a confident flip.
Stack them, drape the salmon over and finish with the lemon and dill.
Worth knowing
- Cottage cheese pancakes are closer to a soft fritter than a fluffy stack. Small ones flip; big ones fold.
- The salmon on top is what makes it 46 g. Without it, the pancakes still carry a decent protein figure on their own from the cottage cheese and eggs.
