  • Turkey breast mince, 2% fat160 g

    Weighed raw. Thigh mince at 7% fat adds about 20 kcal per 100 g.

  • Fish sauce2 tsp (10 g)

Method

  1. Heat a dry non-stick pan until it is properly hot and add the mince. Break it up with a spoon and cook for five minutes, until any liquid has gone and the meat has started to brown at the edges.

  2. Off the heat, stir in the fish sauce, lime juice, sliced shallot and chilli. Taste it. It should be sharp and salty; add more lime if it tastes flat.

  3. Tear in the herbs and add the sesame oil. Spoon into the lettuce leaves with the cucumber cut into batons.

Worth knowing

  • Turkey breast mince is 2% fat, so the pan must be hot and dry and the meat must not be stirred too often. Let it sit and catch.
  • The lettuce is light and this makes a small lunch. Add 100 g of cooked rice on the side if it needs to be a bigger one.
