Method
Heat the grill to high and toast one side of the bread under it.
Turn it over, spread the yeast extract thinly right to the edges and lay the cheddar over in thin slices.
Grill for about two minutes until the cheese bubbles and browns at the edges. Pepper over the top.
Worth knowing
- Reduced-fat cheddar melts less prettily than the full-fat block, but under a grill you cannot tell. It is 65 kcal for 25 g against 103.
- Yeast extract is 38 g of protein per 100 g, which sounds impressive until you notice a teaspoon is 6 g. It is here for the taste.
