  • Beef mince, 5% fat180 g

    Weighed raw. Standard 20% mince is nearly twice the calories at the same weight.

  • Cauliflower rice200 g

    Raw, straight into the salad. It does not need cooking.

  • Tomato120 g
  • Tahini1 tbsp (15 g)
  • Olive oil8 g
  • Fresh parsleyA very large handful, chopped
  • Fresh mintA handful, chopped
  • Lemon juiceJuice of a whole lemon
  • Garlic1 clove, about 3 g
  • Ground cumin1 tsp
  • Paprika1 tsp
  • SaltTo taste

Method

  1. Mix the mince with the cumin, paprika, crushed garlic and salt. Shape into four flat ovals and grill under a high grill for four minutes a side.

  2. Stir the tahini with half the lemon juice and enough cold water to make it pourable, about two tablespoons. It will seize first and then loosen.

  3. Toss the cauliflower rice with the chopped tomato, herbs, the rest of the lemon, the oil and salt.

  4. Serve the koftes on the tabbouleh with the tahini sauce spooned over.

Worth knowing

  • Cauliflower in place of bulgur takes about 70 kcal off and makes the whole dish gluten-free, which the tahini sauce is anyway.
  • Tahini is 90 kcal a tablespoon. The sauce is thinned with water and lemon rather than more tahini, so one spoon covers the plate.
