  • Chicken breast150 g

    Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.

  • Cooked egg noodles140 g

    About 60 g dry. Weigh them cooked and drained. Cooked weight.

  • White cabbage100 g
  • Carrot60 g

    In matchsticks so it cooks as fast as the cabbage.

  • Spring onion30 g
  • Garlic1 clove, about 3 g
  • Fresh gingerA thumb, in matchsticks
  • Soy sauce20 g
  • Toasted sesame oilHalf a tsp (2 g)
  • Rapeseed oil4 g
  • Black pepperWhite pepper if you have it

Method

  1. Cook and drain the noodles, rinse them under the cold tap and shake them dry so they do not clump.

  2. Fry the sliced chicken in the rapeseed oil over a very high heat for three minutes until it browns, then add the garlic, ginger, shredded cabbage and carrot for two minutes.

  3. Add the noodles and the soy and toss with tongs for two minutes until the noodles catch a little on the wok.

  4. Finish with the spring onion, sesame oil and pepper.

Worth knowing

  • Rinsing and drying the noodles is the difference between stir-fried noodles and a wet pile. Damp noodles steam and stick.
  • The soy sauce is the only seasoning and 20 g is close to 3 g of salt. The takeaway version has that much oil again on top.
