Method

  1. Dry the chickpeas thoroughly, toss them with cumin, coriander and paprika, and roast at high heat until they crackle and split.

  2. Chop the cucumber and tomatoes into a rough salad with lemon.

  3. Spoon the couscous into a bowl, add the chickpeas and salad, and finish with the yogurt thinned with a little water.

Worth knowing

  • Dry chickpeas crisp; wet ones steam. Ten minutes on a tea towel first is the whole difference.
