Method

  1. Roast the chopped peppers, courgette and onion at high heat with the oil spray until the edges char, about twenty minutes.

  2. Grill the seasoned chicken alongside and rest it.

  3. Fold the vegetables through the couscous with lemon and their roasting juices, and slice the chicken over.

Worth knowing

  • The roasting juices are the dressing. Scrape the tray out rather than adding oil at the end.
