  • Raw king prawns, peeled160 g

    Raw peeled weight. Cooked prawns are denser per gram, about 85 kcal and 20 g protein.

  • Rapeseed oil5 g
  • Black beans, tinned and drained120 g

    Drained weight.

  • Sweetcorn, tinned and drained60 g

    Drained weight.

  • Red pepper80 g
  • Red onion30 g

    Flesh only. Half a medium avocado is about 70 g.

  • Lime juiceJuice of a lime
  • Fresh red chilliHalf a red chilli, chopped
  • Ground cuminHalf a teaspoon

Method

  1. Pat the prawns dry and toss them with the paprika, cumin and salt.

  2. Mix the beans, sweetcorn, diced pepper, sliced onion, chilli and lime with a pinch of salt and leave it while the prawns cook.

  3. Heat the oil in a pan until it shimmers and fry the prawns for ninety seconds a side, until pink and curled into a C.

  4. Tip the prawns and any pan juices over the salad, dice the avocado on top and add the coriander.

Worth knowing

  • Raw prawns rather than cooked, because cooked prawns fried again go rubbery. They are done when they curl into a C. An O is overcooked.
  • The lime and salt on the beans is the dressing. The 5 g of oil went into the pan and comes back over the salad with the prawns.
